Westchester Chef To Offer Margarita Cake At Greenwich Wine, Food Festival

CROTON-ON-HUDSON, N.Y. -- Chef Sam Eichenberg of THE DESSERTIST in Croton-on-Hudson and an Ambassador Chef at the Greenwich WINE + FOOD Festival taking place Sept. 23 to Sept. 26 sat down with Daily Voice to talk about some of the "sweet" offerings she'll be showcasing at this year's event.

Daily Voice: What can can folks expect at Greenwich WINE + FOOD?

Sam Eichenberg: This year we're taking it up a notch and bringing some extraordinary desserts that showcase some of our specialties. 

At the Grand Tasting, folks will have a chance to experience our Margarita Cake full of bright essence of citrus and loads of tequila. And, at the demo tent, I'll be whipping up Moonshine Apple Pie and Chocolate Martini Parfaits. 

At the VIP dinner we are taking some of the classic flavors of New Orleans and giving them a new look with our creative take on the classics.

Daily Voice: What inspires you and your cooking?

Sam Eichenberg: Everything inspires me. I wander through life always looking for fun, new ideas. Whether it’s a flavor combination, spice, or taste ingredient, I'm always thinking of ways to turn it into a dessert. Even things like art and culture are huge influences. Trying to create a dessert that looks like the ocean or represents a painting or a feeling. Inspiration is everywhere.

Daily Voice: What are some of your favorite things to cook?

Sam Eichenberg: I love making marshmallows. I feel like I'm a mad scientist because there is so much that needs to happen at once. It’s fun, challenging and really cool. I also love making my signature apple dessert. It’s therapeutic and peaceful for me because it reminds me of my family.

Daily Voice: Anything else to say about the festival?

Sam Eichenberg: Greenwich WINE + FOOD is special for me as it's where I made my first imprint in the culinary world and essentially was “discovered”. The culinary talent that is showcased every year is extraordinary and I am honored and humbled to be part of such a sensational group of chefs. 

I never went to culinary school so it’s fun to share my story and show others that they can make anything happen if you work hard. With THE DESSERTIST you are always going to have fun, get crazy, and laugh.
