What Makes It Good: Pizza is taken seriously, starting with the dough. “My dough is my obsession," said Chef David DiBari. "It’s my nemesis, my passion, the thing that controls my emotions, how I interact with other humans and how I sleep at night. Basically, if you love something let it kill you, and that’s what I’m willing to go through to create The Parlor’s pizzas.”
The oven -- brought in from southern Italy -- is another point of pride, making the aroma that wafts through the restaurant as intoxicating as the pizza.
