Millerton Fresh Market will be opening Monday at Millerton Square, replacing the shuttered Grand Union, which was the last one to exist.

Skip Trotta, who owns the building and whose family ran a supermarket in Millerton, said patrons can expect lots of prepared food.

"We'll offer hibachi to sushi and we're going to have a cafe," Trotta said. "We plan on having a lobster tank that can hold 900 lbs of lobster. You're going to find things here that you're not going to get in a chain store. The pricing will suit everyone- both blue collar and white collar."

Trotta said he had hoped to have a more seamless transition from Grand Union to Millerton Fresh Market but had to get the internet set up first.

"We never wanted to close," Trotta said. "People drive in and out of the parking lot all day wanting to shop."

While the store is open, a six-month remodel will take place. Trotta said customers will be able to see the progress as it comes along.

"It's going to be fun for everyone," Trotta said.

Running the supermarket will be Chris Choi, who runs a supermarket in Connecticut. Trotta said Choi has all the right ingredients to ensure the market is a success.

"It has to be clean and you have to have foods people want to buy, not just foods people used to buy," Trotta said. "Chris came here from Korea at 25 years old and has worked hard and raised a family here. He loves this area and he loves doing this work."

A Millerton supermarket is in the bloodlines for Trotta, whose father opened the Millerton Super in 1958.

"I've spent my whole life in business in Millerton," Trotta said. "We've gone from a farming community to a lost wandering community to a reestablished new community. Our Main Street has been revitalized. This supermarket is going to be the heartbeat of the community."
